Ingredients
8 Small Sausage patties
7 eggs
Optional vegetables (onion, green pepper, roasted red peppers, potatoes, jalapeños etc...)
Shredded Cheese
Salt
Pepper
Optional spices (red pepper flakes, chives...)
Optional sauce (Ketchup, hot sauce...
Preparation
Preheat oven to 400 degrees F
Wash 7 Eggs (if you have counter stable farm fresh eggs like us!) and set aside
Open package of 8 sausage patties (thawed out) and put one into each mold
Press each patty to take the shape of your mold (I use mini loaf pans but muffin tins work too)
Crack eggs into a measuring cup (easy to pour from) and scramble
Pour eggs into each mold so they cover the sausage
Sprinkle any veggies you would like to add over the eggs (for example: onions, green peppers, roaster red peppers, potatoes)
Add your choice of shredded cheese on top
Add a pinch (or as much as you like) of salt and pepper to the top of each loaf
Sprinkle red pepper, chives, or any other spice you would like for additional flavor
Put into preheated oven and set time for 20 minutes
Once you reach 20 minutes, pull out and either eat immediately or let cool and use your preferred method of storage for a quick reheat meal the next morning!
Don't forget the ketchup or hot sauce!)
